Menu Composition within the Fast-Casual Segment

In 2008, the Other Sandwich (not hamburger) was the most prevalent within the Top 100 fast-casual chains, making up 19% of concepts down a percentage point from last year. In general, the menu composition of the Top 100 fast-casual chains is widening. This differentiation is likely a contribution to the success of these chains. With the exception of Hamburger, all of the menu clusters contracted in number of chains from last's year ranking. Further, there are several chains new to the Top 100 that increased the size of the All Other category: Armadillo Willy's (barbecue), Breugger's Bagel Bakery, Grand Traverse Pie Company and Smithfield's Chicken 'N Bar-B-Q.
