Industry purchasing is increasingly contracted — whether through chain contracts, GPOs, foodservice management firms or otherwise. This study will review the landscape for contract buying and provide initiatives for more effective sale strategies.

This program will look at the future of fast casual, and what's in store as manufacturers target this increasingly important segment of the industry.
Much has been written and analyzed relative to the Millennial generation on their away-from-home viewpoints and habits. This study will examine the next generation, Generation Z, those born between 1995 and 2012, as they grow up and increasingly have an impact on venue and food & beverage trends. Attitudinal and behavioral comparisons will be made to other generational groups to provide greater context.
This study will focus on how manufacturer evolving sales structures and deployment strategies are evolving with the onset of broker consolidation, category management, rise of GPOs, and higher degree of program buying. Alternative structures and deployment tactics will be evaluated, including broker, direct, and national account level coverage. The role of specialists, such as culinary experts, segment managers, product managers, LLO specialists, etc. will be assessed.
Healthy eating remains a top area of interest and concern with consumers. In this study, we will define and prioritize consumer viewpoints and behavior in a foodservice setting with respect to health and nutrition. We will investigate how the different demographic groups define healthy eating, and how they are responding differently. In addition, operator responses with respect to health and nutrition will be covered.
Technomic will conduct a comprehensive, wide-reaching assessment of change drivers for the food industry focus on foodservice. Given the breadth of coverage, we will present our perspectives in two phases. Both phases will include live feedback from value chain participants.
Part I will cover demand side drivers, namely consumers and operators. We will focus heavily on how changing consumer demographics, lifestyles and values are affecting operator menus, concepts and communications.
Part II will address the changes in go-to-market and supply chain that manufacturers and distributor have to make in order to meet the new market realities.
Traditional QSR still drives a tremendous amount of sales and volume, but many key players have had challenges over the past several years. This study will look at the traditional QSR segment and provide an understanding of key consumer and operator issues to help suppliers better target this important segment.
Consumers and operators are increasingly looking for a "backstory" to the products they purchase. This study will examine the importance of, and best practices in, developing an effective selling story.
With foodservice slowly recovering, driving incremental sales remains a challenge. We will examine various strategies manufacturers can use to drive sales in this new foodservice environment.
