Technomic's 2019 Foodservice Planning Program conference takes place in Chicago. Technomic will provide an industry update, present three research studies that were voted on by members and share insights on issues facing the foodservice industry.

Peter Czimback, Vice President and Head of Global Innovation, Aramark
Attendees will hear from Peter Czimback, the head of global digital evolution and experience incubator from Aramark, discuss his efforts in humanizing the digital experience for the brand. In this platinum-only session, he will highlight ways he is using emerging technologies to help drive down costs and increase consumer value in Aramark’s diverse foodservice locations. As the digital subject matter expert for Aramark's largest global clients, it is Peter’s job to stay abreast of the latest technology trends and advancements and apply them to foodservice operations.

Artificial intelligence, machine learning and natural language processing: These are buzzwords you may have heard of, but what you may not know is that Technomic is now using these tools to create quantitative predictions about the food industry. In this session, Sara Schmillen from Kahala Brands will discuss her perspective on how to leverage limited-time offers in menu strategies, as well as how to drive innovation by leveraging data. Sara brings 10 years of experience with the Kahala Brands marketing team where she has worked on a variety of brands and projects for the company. Kahala Brand’s portfolio contains over 25 chains including brands like Cold Stone Creamery and sweetFrog. Prior to that, she also spent some time at The Briad Group—a decorated TGI Fridays franchisee group that also manages a collection of other brands.

Generation Z: How the "We" Generation Will Force the Foodservice Industry to Evolve

According to Technomic’s recent 2018 Generational Consumer Trend Report, the members of Generation Z will rely on foodservice more than previous generations. In this study, Technomic will explore the attitudes and behaviors of both younger (ages 13-17) and older (ages 18-25) members of this generation. We will uncover their expectations for service formats, menus, brands and beyond, across the different segments they frequent, from schools to restaurants. We will also discuss how the industry will need to evolve over the next decade, as this generation grows their influence and nears peak foodservice spending stage (30s).

The Transforming Distribution Landscape Over the Next 5 Years

The foodservice distribution industry faces a sea of change centered around both macro and foodservice industry dynamics. From a macro perspective, driver shortages, new regulations and technology enablement provide new challenges. Within foodservice, new competitor types, including third-party e-commerce sites, increased group purchasing, shifts toward more difficult-to-handle products such as perishables and more overall intense customer demands result in distributors rethinking their entire business models. This study will look at how the foodservice distribution industry is expected to evolve over the next five years from sourcing, go-to-market, customer targeting and position standpoints. All of these will be examined under the lens of how this impacts the supplier community, and recommendations will be provided on how suppliers can leverage opportunities and overcome threats. Technomic will also provide its forecasts for the distribution sectors over the next five years.

Distribution Perspective with DMA
Pat Mulhern, CEO & President, DMA
In this session, Pat Mulhern, CEO and president of DMA, will discuss the ever-changing distribution landscape and how DMA is adapting to serve the industry better moving forward. He will share his perspectives on how manufacturers can more effectively work with foodservice operators. Pat brings a wealth of experience to his leadership of DMA. Prior to DMA, Pat spent 17 years at US Foodservice, and his last two positions as president of Monarch Food Group and president of the North Star Foodservice. He also served on the board of US Foodservice from 2006 to 2011. From 2002 to 2006, he was a founding partner, executive vice president and member of the board of directors at Vistar Corporation (now part of Performance Food Group). Earlier in his career, Pat held senior leadership positions at both Kraft Foodservice and Alliant Foodservice, eventually acquired by US Foodservice.
