Critical Strategic Issues Facing Foodservice Manufacturers to the Year 2022

Technomic evaluates the overall foodservice industry environment and updates the critical strategic issues facing foodservice manufacturers. Within this study, critical issues facing each of the channel participants will be evaluated with respect to implications on manufacturers, including consumers, operators, distributors and third-party providers. A component of the study will include a side-by-side comparison of the foodservice and retail food industries as well as trends impacting each. Specifically, Technomic will analyze the industry situation, develop the critical issues and identify alternative strategic responses for foodservice manufacturers to consider.

Brian Todd, senior vice president, merchandising, at Sysco Corporation, has been working closely with manufacturers in supplier partnerships, strategic sourcing and merchandising for the past seven years. He will discuss Sysco's outlook on the future of distribution, some of the successes and pitfalls of their business, and how they plan to navigate manufacturer partnerships in the next five years.

The Changing Menu Development Process within Chains

As same-store sales have been challenged and competition intensifies, chains have employed new products and menu development activity as catalysts for driving revenues within their operations. This program will provide a view of the changing nature of new product development processes within restaurant chains, including an assessment of innovative opportunities for supplier interface and input. This study will focus on a review of departments and functional areas involved in the process; the role of franchisees and units; operational, strategic and policy issues; market test processes; and how manufacturers should align themselves with chain partners to maximize success.

Liz Matthews is Taco Bell’s chief food innovation officer (CFIO), leading the brand’s Food Innovation and Quality Assurance groups. Her teams are responsible for creating the unique, craveable flavors and Mexican-inspired menu items that consumers love, while at the same time ensuring that only the highest-quality ingredients are served to more than 42 million customers every week.

With more than 20 years of experience in the food and restaurant industry, Liz has led Taco Bell’s most successful product launches in fast-food history, including the groundbreaking Doritos Locos Taco, the protein-packed Cantina Power lineup and next-generation breakfast menu to name a few.

Liz will offer a peek behind the curtain when it comes to Taco Bell’s menu innovation and current LTO development process as well as how she sees that evolving in the future and the impact it will have on manufacturer partners.

A New Way to Tell the Brand Story

Big data is all the rage but it means nothing unless you know how to use it. In this exciting session, Technomic’s Innovation team will reveal the future of data for the foodservice industry. Using near real-time transactions from 20 million monthly consumers, we will show you how to anticipate shifts in traffic and spend before the brands themselves have reported, understand consumer brand- and channel-switching patterns, measure the impact of new initiatives to drive visit frequency and lift average check, and drill into local market dynamics to pinpoint and diagnose real versus perceived competitive threats.

Noncommercial 2022: Outlook and Opportunities

The noncommercial segments represent about 20% all foodservice purchases and for many individual manufacturers are an important part of overall business. In this study, Technomic will cover the future for these segments: Business & Industry, K-12 schools, Colleges & Universities, Hospitals, Senior Living, Long-Term Care, Healthcare, Vending, Military, Refreshment Services and Corrections. Specifically, topics to be included will be size, segmentation, purchasing practices, operational characteristics, menu development and the role of multiunit purchasing. The key deliverable of this study will be to provide Technomic’s perspective on the outlook of each “beyond restaurant” sector, and required manufacturer actions and responses for future success.
