Canadians' routines and habits present challenges for emerging bakery- and coffee cafes, Technomic finds in new study

The 2019 Canadian Bakery & Coffee Cafe Consumer Trend Report explores how competition is heating up for both categories and the impact consumers’ routines have on patronage

CHICAGO, May 21, 2019—In the 2019 Canadian Bakery & Coffee Cafe Consumer Trend Report, Technomic found that many coffee cafe customers stick to the same restaurant brand and, oftentimes, the same cafe location, due to their coffee preferences and demands for convenience. On the other hand, bakery-cafe customers are open to mixing up the brands they visit, challenging these operators to build up loyal customer bases.

“For emerging coffee cafes, the challenge is in getting consumers to break from their routines and try something new,” explains Charles Winship, manager of consumer insights at Technomic. “While specials and limited-time offers can help draw in new visitors, whether these guests habitually return will ultimately come down to value, convenience and, in many cases, coffee.”

Key takeaways from the report include:

  • 64% of coffee cafe users say they’re more likely to visit a chain rather than an independent when visiting these restaurants
  • 33% of bakery-cafe users strongly agree that they would purchase breakfast foods for lunch and dinner at these concepts
  • 77% of Starbucks customers say they visit more so for the beverages, while 20% of Tim Hortons customers say they visit more so for the food

Compiling findings from more than 1,300 consumer responses, the comprehensive 2019 Canadian Bakery & Coffee Cafe Consumer Trend Report helps operators and suppliers better understand how consumer patronage, attitudes and preferences at bakery- and coffee cafes are evolving and to identify prime opportunity areas.
